The shell has a classic form, with smooth shell and edges, unlike Pecten maximus (common name the "great scallop" or "king scallop") which has flutes and scalloped edges; size is around 80 mm, with individuals up to 170 mm in diameter. The shell is generally pinkish-red in color, with striped variegation to darker shades appearing in many individuals.
What is the best way to cook scallops?
Add the butter and oil to a 12 to 14-inch saute pan on high heat. Salt and pepper thescallops. Once the fat begins to smoke, gently add the scallops, making sure they are not touching each other. Sear the scallops for 1 1/2 minutes on each side.
